If you are anything like me, you probably miss bread and bread like products. When I started living the Paleo Lifestyle bread was the hardest food for me to give up, so when I discovered Otto’s Naturals Cassava Flour I could not have been happier. The original recipe for this bread can be found on their site but I modified it a little bit to make it more of a “coffee dunking” bread.

1 cup, Otto’s Cassava Flour (sifted)
1 cup, Organic Coconut Flour (sifted)
1 tsp, Red Mill baking soda
1.5 Tbsp, all natural honey (I get mine locally from Circle C Farms)
6 eggs
¼ cup, Olive Oil

Directions:

After all dry ingredients have been sifted, place in a large mixing bowl (you can also do this in a food processor). Add all of the wet ingredients, if you are using a mixing bowl as I did make sure to whisk your eggs before putting them into the batter. Stir or beat the batter until completely mixed.
*Grease your bread pan (I used Ghee).
In a 350 degree preheated oven, place the loaf pan of bread mix in the oven and let bake for 30 to 35 minutes. I checked on mine every 5 minutes after 20 minutes of baking just to make sure I was not over baking it.

Enjoy:

Slice a couple pieces off and spread some almond butter, ghee or just simply dunk it in your coffee and enjoy.
